“Sweetheart”: Because harvested at this size, it is at its sweetest! All the delicate flavours are contained and concentrated in a dainty plump and juicy oyster.

“Onno”: This rare little sea gem takes 3 years to grow. Its taste is best described as creamy with pronounced mineral notes.

Note: As a farm we take pride in delivering the oysters to you live in the shell. They are packed in a cooler bag with ice packs. Upon receipt, you can place the entire bag in the fridge. Open the bag to let the cold air in. Should you want to leave them overnight in the fridge, you may want to take out one or 2 of the ice packs. Because when it’s too cold, the oysters open up (still alive).
